I’m a fall girlie at heart (seriously, the second the calendar turns to September, my life becomes my own personal version of the Red album), but I have a confession to make: I hate pumpkin.
It feels borderline sacrilegious to admit my distaste for the PSL, or my preference for pecan pie at Thanksgiving. But no matter how hard I try, I just *can’t* get into the flavor.
That’s why I made it my mission this autumn to whip up a few seasonal treats that really do strike my fancy—and, spoiler alert, I think I’ve found a new fall-y flavor to fawn over. Consider this your official apple cider cookbook.
Breakfast Pull-Apart Bread
In case you needed another reason why you shouldn’t be skipping out on breakfast. This pull-apart bread is the perfect mix of gooey cinnamon bun and crunchy French toast with an autumn twist. The secret? There’s apple cider in the dough *and* the frosting.
Toss some apple chunks in your dough for extra flavor, or drizzle with a bit of caramel. Paired with a warm cup of cinnamon tea? We couldn’t think of a cozier Saturday morning.

No messy fryer needed—these doughnuts are baked in the oven (snag a cheap doughnut pan for $12 at Target or get extra festive with fall-shaped molds) and sprinkled with sparkly cinnamon sugar.
While your doughnuts are baking, mix up together some caramel sauce and apple cider for drizzling. To turn this into a decadent dessert, cut your doughnut in half and add a scoop of vanilla or maple-flavored ice cream.
Dairy-free apple cider marshmallows
Dairy-free Rice Krispies, anyone? Yep, these mini apple cider marshmallows give all those fall feels while being totally vegan. Snack ’em on your own or add them to a drink (think: warm spiced cider or ginger tea).
You can also melt these marshmallows to make an apple pie dip. Just line a baking dish with apple pie filling and place a layer of apple cider marshmallows on top. Bake in the oven until toasty and use graham crackers to dip.
Apple cider cinnamon milkshake
While a warm cup of apple cider can satisfy our apple cravings, switching to a chilled version of this classic can equally do the trick. For this must-have milkshake, just toss three ingredients in a blender: vanilla ice cream, apple cider and cinnamon (yep, it’s really that easy)! Garnish with whipped cream and a cinnamon stick. Bring this easy-to-make bev to your next afternoon picnic or spooky Halloween party—either way, your dessert will be the talk of the night.
